Logging of changes and or access to items in a mailbox

How can I enable logging on a mailbox to monitor what is changing the modified date of items?  I have a user who uses auto-archive to delete items in specific folders every 14 days.  He receives a lot of email and requires this to work to keep his mailbox under 2 GB.  The modified date is changing at odd times and in bulk.  It does not appear to be the antivirus or other scheduled events.  He does have a Blackberry but clears all old items off his Blackberry almost every day (reconcile I read modifies the date).  Regardless, he wants to know exactly what is modifying the date.  Your help is most appreciated.

Thanks for the info.  I knew about Outlook but I was hoping there was a way to monitor changes to items on the Exchange server.
