Setting up test email domain on Exchange 2007

My company just purchased a hardware spam filter which I want to test with a dummy domain name that we own. We are currently have 4 Exchange 2000 servers which I will be replacing with Exchange 2007 servers that are already in place and ready to go. I have not migrated yet because I need to configure and tune the spam filter then put it into production then I will be able to migrate to exchange 2007. I need to know how to add mytestdomain.com to the exchange 2007 servers which are already connected to mycurrentdomain.com and create a few email addresses with the @mytestdomain.com address and test the spam filter. I have a short deadline and in need of help. Your comments will be greatly appreciated.
