How do I "overwrite" Exchange 2003 with Exchange 2007 on a server?

I have a Windows 2003 server that is running Exchange 2003. I want to get rid of the Exchange 2003 and replace it with Exchange 2007. I do not want to upgrade because I want to start fresh with a brand new email domain and retire the old one. What's the best path to achieve this?

Right, but it's just a matter of Microsoft supporting you or not. They just want you to upgrade hardware to x64, but they say it works just fine on x32: http://technet.microsoft.com/en-us/library/aa996719.aspx. Besides this is not for production, it's for development. I appreciate your concern, but it's not true that Exchange 2007 only runs on x64.

You can run Exchange 2007 in a development/test environment and this is something that I do. As you say you would not do this in a live environment as it is not supported - sorry for the confusion but the post did not mention development or testing

It runs, but when wee deploy a solution we would want to make sure it is supportted by the Vendor (in this case Microsoft)
x32 -  Only for Remote Administration and Test Setup
x64 - Production
