I have an enduser who has 2 mailboxes,  her own mailbox plus an info@company.com.  Info@ company.com is an actual userID in ADUC.  On this enduser's Outlook I have her profile set to open up her mailbox plus an additional mailbox (info@company.com mailbox).  My question is this:  how do I delete the info userID from ADUC, keep the mailbox, and still have this enduser open up the additional mailbox?

I'm afraid you can't. All Exchange mailboxes are connected to Active Directory objects; if you deleted the User Account for the Info mailbox in Active Directory, Exchange would mark the mailbox as disconnected, it would no longer be able to receive incoming emails to that address, and eventually (usually after 30 days) the mailbox will be purged.

The only alternative is to add the info@company.com email address onto the main user's Email Addresses list in Active Directory. This could cause confusion though, because all incoming info@ mail would be delivered to the user's main mailbox, and it would not be possible to differentiate between the user's personal incoming mail and generic info@ messages.

That is what I thought.  Thanks.
