Can I prevent the emailing of certain files?

We have certain secure files on our network that I would like to prevent from being emailed.
Is there a way I can do this?
I have a Windows 2003 DC running MS Exchange 2003 and Symantec Mail Security 5.0.

You can actually set this in Outlook, there are some reg keys you can edit (check text halfway down about recent Outlook versions), so it blocks attachments in a similar way to how .exe files are blocked:-

Then you might just need to import that key with a login script (or there are other ways these days like custom Administrative Templates, or Server 2008 Preferences).

In Outlook 2007 you can use a downloadable Administrative template with a GPO to set this:-

I was talking more like specific spreadsheets that I do not want emailed out of our organization.
