How to change the time zone on a macbook pro without changing entourage calender when in new zealand but used to live in london. 12 hours difference

I am wanting to know how to change the timezone from london to new zealand (12 hours ahead of London GMT) on a macbookpro without it affecting my entourage software.  Because at the moment when I do change the time zone...my entourage calender jumps 12 hours ahead.

The OSX system date and time affects ALL applications.

What are you trying to achieve by keeping Entourage date and time on GMT?  
You can look at Entourage's Own settings in the Preferences

Select Entourage > Preferences.
Rotate the General Preferences triangle to reveal its options.
Click Calendar.
Select the desired time zone from the Default time zone for new events:.

Well the user has just recently moved to New Zealand from London and he uses entourage calender. He wants to change the time
zone of his machine but when he does, all his calandar entries jump to the new
time zone  how can I fix this so that the calender entries stay in London time?

Is he using an Exchange Server or just standalone Entourage?

Did he look at the Entourage time Preferences as I mentioned.
