You can establish which email domain names to accept by setting up or changing this in the recipient policies portion of the exchange ssystem manager.
This link explains that pretty well:  http://www.petri.co.il/configure_exchange_2000_2003_to_receive_email_for_other_domains.htm
If you no longer wish to use the old domain name, then you would remove it there.
You will have to be sure that the new domain name exists, and that there is an MX record in the DNS to point to your email server for that new domain.  You should set up a PTR record at your ISP too.  You will want to change the server name (as it contains the domain) found in the SMTP virtual server properties.

Couple easy steps:
-   Open Exchange System manager
-   Click on Recipients
-   Click on Recipient Policies
-   Double click on Default Policy Properties
-   Click on the tab E-Mail Addresses (Policy)
-   Click on the button NEW
-   Select SMTP Address
-   In Address Space type @xyz.com
-   You can set xyz.com like primary e-mail
