Running a exchange server but not a live one. It is acting like it wants to send emails and giving the wrong email address and error messages with delay and undeliverable. I have shut down the MTA Stack and should I shut down the SMTP service or any other service.

What do you mean, Not a live one?  If you mean you only use internal email, with nothing coming or going from the Internet, then set SMTP to Disabled as well.
