We do have IMF enabled, and now this has come up:

The Unsolicited Commercial Email default filter level has been updated.  The new value is 6.

Why did it update by itself?

Thank you!

The gateway threshold being changed can cause this. Also, I've seen it when new filters are downloaded, is automatic downloading enabled?

What is the gateway threshold?  How would it change?

I did do automatic updates last Wednesday when they came out.

Gateway threshold can only be changed by an admin. Its the automatic update then. This will appear in your logs everytime they update.
