You can have as many Domains as you want on Exchange, and the Default (return address) can either be set manually (easiest for small number of users), or through some sophisticated policies.

As to Outlook, you cannot change the "return address" on a single Exchange account from Outlook.

There are other ways, however, to accomplish what you are probably after, but they require quite a bit of work.

to add the 2nd domain, check http://www.petri.co.il/configure-exchange-2007-recieve-email-other-domains.htm for Exchange 2007 and http://www.petri.co.il/configure_exchange_2000_2003_to_receive_email_for_other_domains.htm for Exchange 2003.
To select the email address at the time of sending an email, you might have to use tool mentioned in http://www.ivasoft.biz/
