I have been asked to find out who a specfic users is sending mail to.  I have gone into the Toolbox / Message Tracking and setup paramaters to see this users Sent email for a certain time frame.  I can get the information on the screen, but how do I get it into a report or an excel document.  Copy and Paste doesn't work. Any help would be much appreciated.

When you have found the query that gives you the correct result copy that shell command at the bottom of the window and paste it into an exchange managment shell. Pipe the command to a file to get the result out to a text file.
Example:
get-messagetrackinglog -EventId " Receive" -start "insert date here" -end "insert date here" > c:\result.txt

See if that helps you on your way.
