Can you restore individual emails from tape?

I've got a user that deleted about a month's worth of emails and needs to get them back. I use the builtin Windows backup utility to run a full backup every day. The emails he needs are older than my deletion settings.

This is a Win 2k server with Exchange 2000.

Is there a way to retrieve these emails off the tape without having to restore the entire server?

If you had another replica server you could restore just the Exchange DBs and then mount them, export your data and dismount, then import back into the live server. You could probably achieve this quite easily with VMware or some virtual solution. If you had used BackupExec though you can restore to a different user on a mailbox by mailbox basis and then just Exmerge the data you need. You are probably going to struggle with this on 2K with Exchange 2K and just an NTBackup restore.
