Move DAS to new server

I need to put in place a new server and remove an old one.  The old server is connected to a Dell MD1000 and I would like to connect this MD1000 to the new server.  I understand I will have recreate the shares and what not, but I am really needing a step by step to make sure I do this right.  If I lose the data that would really bad.

Unless you run any destructive commands on the array, you should be able to move the array from one server (after ensuring you've either shut down cleanly) to another without losing any data. As for exporting shares, check this:

Unfortunately, there's no silver bullet for something like this. You're going to need to plan, test, document, test, backup, test restore, document and implement this yourself. It'd be a very brave or stupid person that would give you step by step instructions for this without actually doing this themselves.

There is a product called hyena that may be able to help you a little with this:
