I wear a lot of hats...

"The solutions and answers provided on Experts Exchange have been extremely helpful to me over the last few years. I wear a lot of hats - Developer, Database Administrator, Help Desk, etc., so I know a lot of things but not a lot about one thing. Experts Exchange gives me answers from people who do know a lot about one thing, in a easy to use platform." -Todd S.

You would also need to tell your clients to get updates from this new WSUS server.|

ok, thanks. do i have to configure anything special for the clients?

You have to tell the clients to look at this server for updates instead of microsofts server. This should also be in that guide. This can be achieved by using group policy, see link below.

but do i have to configure the WSUS Administrative Template on each computer separately or can i do it on a server? we have dozens of workstations...

It depends....
If you have a domain, you can push out the configuration using group policy.

If you have a workgroup, you must visit and configure every computer.

You can create a group policy using the link that i posted earlier as the first answer to this question. You will be able to apply this policy to all computers that you want to use your WSUS server. You would need to open active directory users and computers, select the topmost OU that contains all of your computers but NOT your WSUS server. Right-click and go to properties, click the group policy tab and create your policy from there using the guide i provided.
