How do I change to a 7 day a week schedule?

If you are talking about changing the work calendar to a 7 day work schedule, you can do that as follows:

1.) Go to Tools menu and select Change Working Time
2.) Make sure the Standard Calendar is selected if you want it to apply to the entire project. You can also apply it to only certain resources with custom schedules if needed.
3.) Click the S at the top of the calendar that represents Saturday and then choose the Non-Default Working Time option on the right
4.) Do the same for Sunday
