Adding metadata to a video file


I am currently working with video files from aircraft which has burned in metadata from aircraft sensors such as altitude, sensor name etc. I am trying to hand edit some on the data in the video for demonstration purposes and cant do it with any of the tools i have at my disposal. Somewhere in the file there is data about the name of the mission, would it be possible to somehow convert the file to binary, then search for 'Mission 254' and replace it with 'Mission 100'. I know this is very simplistic and has 0% chance of working, i was just wondering if anyone had any ideas

Just an idea, if you wish to add to text to a video manually some authoring tools can do this such Nero Vision and Camatasia studio
Not sure if this is on the same area, but if I wish to add a piece into a video with text ( or meta data) I simply pause that piece of the video /capture a still shot then save that image/ add in the meta data here save it  then again capture the still image for 10 to 15 secs to change it to a video again save that
 then drop it onto Nero Vision video timeline with the original video sequence and export it as a complete video.
Take this still image with metadata
 capture that for 10 secs or a time frame so that the data can be read with ease this will produce a video like sequence from an image.


Alternatively you can add the captured image with the original video without text drop onto the video timeline and add in the text.
Nero Vision does this very well.
