convert from a single exchange 2007 on server 2003 to exchange 2007 CCR on server 2008

I am currently running exchange 2007 on a single 2003 box. I want to upgrade to server 2008, CCR. I want the current hard ware to be one of the 2008 boxes ( i know I can't directly upgrade to 2008) and use a virtual machine as the other node, and a virtual server as the client access and hub transport server. The main thing I am concerned about is transitioning the current box, and my current mail. All the articles I have read pretty much go from the assumption that you are doing this with a new domain, and new users. How do I install this and carry over all my mail?

Install two new 2008 servers.
Cluster the servers
Install Active clustered mailbox role on server1 and passive role on server2.
Move all the mailboxes from the current server.
Take the current server off once everything is working fine.

Thank you for your response. Ok, looking at your first post, I get all that. What happens after I take off the current server? Please keep in mind I want to upgrade the old server to 2008 and use it for client access and hub transport.
