How can I stop mail flow between Hub Transport and Mailbox Server for some time

I have a Exchange 2007 Server with Hub Transport, Mailbox and Client access server install in MAIL1.  I want to stop the mail flow from Hub Trasport to Mailbox Server as I need to do some testing in Mailbox Server. Any user sending the mails should not reach Mailbox Server, it should be in HUB queue.  How I can do the above. Any service should I stop?

If you want your Mailbox server to not able to send / receive emails, you should be stopping mail submission service on Mailbox server which would stop your Mailbox server to stop sending / receive notification to / from Hub Transport server for sending / receiving emails

Turn on a firewall that blocks traffic from that IP.
