How to document setup of an Exchange 2003

I have been asked to document an Exchange 2003. In other words, its configuration settings, maiboxes, permissions etc. If there any command line tool to do this? I know how to use Export List feature from GUI but that can only show limited info. Thanks.

Use Exdump.

It gives full info about your Exchange servers. Free from Microsoft.
