Which CPU configuration is best?

We have a server that we purchased 2 years ago with the following CPU config

2 x Intel Xeon Dual-Core 5050 3.00GHz (2x 2MB L2 Cache) - 667MHz FSB, EM64T, 95W

we asked our supplier to supply us witha new server to match the old one, it has this CPU config (the only difference)

2 x Intel Xeon E5205 Dual-Core 1.86GHz (6MB L2 cache) 1066MHz FSB, 45nm, 80W

I do not know enough of processors to evaluate the differences, especially the 3.00GHz v 1.86GHz

can anyone help?

I couldn't find benchmarks for those specific cpus, but in this chart http://www.cpubenchmark.net/high_end_cpus.html, the Xeon 5120 @ 1.86GHz beats the Xeon 3.0Ghz (1257 versus 1119).  The E5205 is the 45nm Wolfdale version of the 5120 Woodcrest model and should slighter faster, with a 6MB L2 cache as opposed to a 4MB cache.  I think the Xeon 3.0GHz cpu listed is the Dempsey model you have because it was the last of the Netburst family, in the same range as the Opterons.  All following Xeons were based on the new Core architecture and were much faster than the same speed Opterons.
