Building new Exchange but need to deal with Old exchange

Today our exchange server blue screen on us located on the C drive.  As for the Store it still is on the D drive.  I have built a new exchange box on a new 2003 server.  AD still looks at the old-mail server because Exchange wasn't properly removed from the domain.  I'm thinking that if load 2003 server and backup the old store to an external drive then I can restore all the mail boxes to the new store but before I do that I need to remove the old exchange server from Active Directory.  I know nothing is simple is there a easier solution to this I would like to just point everyone to the new server within AD.  This will allow them to see the new exchange..  I know I can create a new user and point them to the new exchange but I don't want to do that.  Can someone tell me what would be the best procedure to move everyone with in AD to the new exchange

Right now I'm trying to get all my users to see the new exchange server to give them new mail boxes Exchange server see's active directory but when I add a user on the DC it doesn't give me the option to create a mail box for the user which means I did something wrong on the exchange install. I want to remove exchange from the new box but it will not let me because email came into my system mail box any ideas
