Restore SharePoint 2007 Using STSADM

We have a production environment that we would like to a restore to a test environment. Our prodution environment consists of two front end web servers with one doing the indexing. We have two SQL servers in a cluster.

Our test Sharepoint environment consists of one we front end server and one sql server.

Both use SharePoint 2007.

Can we restore using stsadm even with different configurations? Any advise from you pros?

I will be using a different  url for the test site. Will that still work?
Yes, just use the different url on the restore command.  
We have multiple sites in our web application. Will this restore all?
That did not work. It threw an exception for one of the sites.  I also do not see the sites form the old server in the site collection list. I ran iisreset /noforce
I created a new web application and it said the command completed succesfully, but I don't see the sites that were supposed to be restored.  Should I have run an exprot.import?  I want to restore the entire web application
I ended up  opening up case with Microsoft on this.  There are issues using stsadm to restore if the site is over 2 gig. I successfully restored the database using the sql backup and importing the database using stsadm.
