Exchange - forwarding after employee leaves

Key employee leaves and expect mail to be sent to him indefinitely for now.  Immediate solution, forwarding his ( mail to address via ADUC user exchange tabs. So for now his mailbox and nw/AD credentials still  exist and mail hits his/employee that left mailbox.

Is there a way to in effect eventually get rid of the mailbox and nw/AD user id, but still get mail addressed to to forward to using an alias or something?  Please breifly outline the steps/screens if so?
