can one MX record be on two servers

My company is in the process of being acquired by another company and I need to know if I can use their MX record on my exchange server?  There will not be any connectivity between the two groups.

If you mean can you move their MX record so that your Exchange system deals with their domain, yes.

Then change the MX record to point to your MX records for your "main" domain (i.e. mail.company.com) and voila, email shall start flowing into your Exchange :)

it still would need to continue to work for their mail also.
