You can move it back if you want to, if that is what you mean.

No exactly. The mailbox change its version number once you migrate. The question is what version number have when back to Exchange 2000, the version number of 2000 or 2007 ?
I have been working with Exchange for many years, and I was not aware of a version number on the mailbox. Where are you seeing that? Why is it an issue for you?
I have moved mailboxes between versions of Exchange in the past with zero impact to the operation of the mailbox.

Answering...

Version number is important if have impact about operations, for example, many cmdlets control the version of the mailbox to apply some changes (language settings by default is a case).

When you´re transitioning or migrating between Exchange 2000 and Exchange 2007 you apply cmdlet´s like Move-Mailbox which change the mailbox version to do another operations with the rest or cmdlets, then you make operations with those cmdlets, but....if you want back to Exchange 2000 and move the mailbox to a Exchange 2000 server, how are now that settings ?. If the version number goes back, what happend with the settings? simply loose ?, the client opens the mailbox and what happend with the changes ?

Thanks.
I can genuinely say that is the first time I have heard of mailbox version, so I am unable to answer your question. I can find nothing on the Microsoft KB about that, so either have to presume it isn't an issue, or it isn't something that Microsoft have seen. You may have to take it to Microsoft to get a clear answer.
