SYNC Outlook with IPHONE both ways

We had one user here in the office try to sync his IPHONE with his Outlook and lost everything.  Why did this happen?  Was it because it syncs only one way?  Is there a way to set up ITUNES to sync in both directions for changes?

Are all of the messages and not in Outlook.
I havent used the mail sync with itunes, most people are using the Exchange Active Sync to do this through the air...
Normally though this sync should be one way but should NOT delete stuff from outlook...

Sorry what I said there was not really easy to understand...

What I meant is itunes should do a merge... Anything on the phone goes to outlook and anything that is in Outlook and not on the phone is synced...

It should NOT delete anything...

So nothing ever gets deleted on either side??  Its not a one way sync?
