Can't get date to format and validate properly

I have a date field, Order Date, that is required. I want the user to be able to enter only as m/d/yyyy (so they don't have to enter the leading zeros on month and day), but it needs to show on the form and validate as mm/dd/yyyy. Also, I need to default the date to current date. When I default the date and then don't change it, when pressing the Submit By Email button I get the message that I have entered in the Validation Pattern Message. If I change the date manually or with the date picker it works fine. It has nothing to do with the Submit by Email button, it has to do with the default and the validation patterns. I have tried defaulting the date in many formats and tried many different things with the validation patterns. Example attached.

I need the date to default to current date and be able to press Email immediately without getting error. If the user changes the date it needs to be selected from the calendar or entered as m/d/yyyy. The date always needs to show as mm/dd/yyyy.
