We want to be able to archive emails.  I know there are a bunch of different appliances to do that, but is there a way in exchange to do a realtime backup of our database that basically just backs every email up as it comes in?

In your Exchange you can have a replication data store. And have a full backup from your Exchange databases

But archiving the emails, without using any other tool, i cannot see how

This is the list that Microsoft provide from partners that have that tool. I do not know if any is free. But i don't think so
