SBS 2003 and MX records setup

We have an sbs 2003 setup with one of our customers who currently use the pop3 connector we want them to move away from this and chaage the mx records with the hosting company to point directly to the static ip of the server so the mail is delivered directly without the 15 min delay of the pop3 connector , The problem i face is the amount of mx record they have for the domain and which ones to change ? the hosting company are being less than helpful with this
I have attached a word document with details of the current MX record setup just need to know which ones to change without loosing mail completely
2 Solutions
Remove both of the current "MX" records
Ensure that the MAIL "A" record points to the External IP
Create a new "MX" record of Preference "0" and a value of "MAIL.YOURDOMAIN.COM" where yourdomain.com is, well, your domain name.
www.dnstrouble.com - Run the MX Checker once done to ensure its working right, then validate the mail server on there also.
I would recommend on using a preference of 10 and not 0, as per the RFC
