I realise under SBS2008 Premium I can have additional 2008 servers for SQL server etc, but as I have an existing 2003 based application that is not approved to run on 2008, can I join additional 2003 servers to the 2008 domain, running my 2003 approved application under 2003 but within the 2008 domain

To answer your question directly, you can connect a Windows Server 2003 box to the SBS 2008 domain as a member server and run your legacy apps that way.
