I have a bunch of wav files - someone speaking short sentances - and I want to set their level/volume to the same.  There are various 'batch processing' apps I've tried, but none of them seem able to offer this kind of thing.

Have you tried Sound Normalizer? It has a batch processor.
    Good Luck.
