SBS 2008 migration - forgot to uninstall Exchange 2003 before demotion

I screwed up.  Did a migration from SBS 2003 to SBS 2008 on my home network this weekend and all went well - I thought.  I'm trying to install a Blackberry Enterprise Server and it puts in the name of my old Exchange Server when doing the MAPI setup.  While troubleshooting that problem I discovered that the reason it's doing that is because I forgot to uninstall Exchange 2003 on the SBS 2003 box before demoting and removing it from the network (shouldn't try and finish up late night).  As a result, there are still references to it in AD on the SBS 2008 box.  Any suggestions for removing those references?

Thanks for the help.  Glad I did this on my network rather than a client's.  I don't think the articles will do much good since I am trying to remove the references to Exchange 2003 on the SBS 2008 server.  You've confirmed what I thought though - that it will involve some hacking.
