Cannot change email details for User in SBS 2003 R2

I have an SBS 2003 machine and am having problems correcting the email address.

The User's name is say John Smith - when I send emails from Outlook, the name sent is the full, when I want it to be

I have gone into 'Server Management' > 'Manage Users', clicked on the User Properties, changed email address on 'General' tab as well as going to 'Email addresses' tab and making the primary address and removing the JohnSmith one.

The problem is that after 5 minutes or so, the settings revert back!

Any help appreciated as its driving me nuts!
