Cannot change email details for User in SBS 2003 R2

I have an SBS 2003 machine and am having problems correcting the email address.
The User's name is say John Smith - when I send emails from Outlook, the name sent is the full JohnSmith@domainname.co.uk, when I want it to be John@domainname.co.uk.
I have gone into 'Server Management' > 'Manage Users', clicked on the User Properties, changed email address on 'General' tab as well as going to 'Email addresses' tab and making John@domainname.co.uk the primary address and removing the JohnSmith one.
The problem is that after 5 minutes or so, the settings revert back!
Any help appreciated as its driving me nuts!
