Can you use a Foundry FESX FastIron Edge X448 to deploy DHCP to workstation.?  I see an option in the config for DHCP assist but I am not sure of what that means.

I see an option in the config for DHCP assist but I am not sure of what that means.  We currently use a DHCP server for DHCP deployment but would like to use our switches for DHCP and create various subnets.

    This is of course dependent on your network topology, however in general it is usually best to have one source manage and distribute DHCP in a given area.  You can, if your hardware/software supports it, use other servers and appliances to act as "relay agents" - DHCP agents which co-ordinate with the main DHCP source and relay requests/assignments - to extend coverage.  This way you minimize "double booking", or the conflicting assignments of identical IP addresses because of address pool management.  It also makes it far easier to manage, because scopes and reservations need only be made from one source.
