New to Exchange server, looking to initiate a backup regime

I've just implemented the POP3 connector and Exchange functions that come with SBS2003. I've got it all working as i'd like and I feel there should be some backing up of emails. What file(s) do i need to backup?

Do you use active directory?

I use symantec backup exec 12.5

Allows me to do tape backups and backups to remote folders.

You can restore mailboxes easily with justa  few clicks or eve just restore emails if somone has deleted them by mistake.
