How can i remove the mail merge button?

I don't think you can completely remove the mail merge button.  You can, however, change the function behind it so that users can no longer run a mail merge.
First, you need to create a custom s-control:
(1) While logged in as the administrator (or a user with the appropriate profile):
(2) Click Setup (upper right-hand corner)
(3) Under App Setup, click the Develop area to expand it
(4) Click S-Controls
(5) Click New Custom S-Control
(6) Give it a label and a name - whatever you like
(7) Make the type URL
(8) Under content, enter a URL - possibly the URL of your corporate web page.  http://www.mysite.com
(9) Click Save
Now you need to replace the Mail Merge button with this:
(1) Scroll up to the Customize section and expand it
(2) Click the activities area to expand it
(3) Click Activity Buttons
(4) Next to Mail Merge, click override
(5) For Content Name, choose the name of the custom s-control you just created
(6) Click Save
Go test it out now.  The button will still be there, with the same name, but when the user clicks it they will be taken to your web page.  If you want to get creative, rather than inserting your web page, you can just put in HTML code that informs the user that this function is no longer available in your version of Salesforce.com.
You can remove the mail merge button

Click Setup. Under customize, go to the Page Layout you want the button removed from(ie. Account, Contact, etc.)

Edit the page layout, scroll to the Activity History and click the Related List Properties button. Scroll down and click the Buttons section and then UNCHECK the Mail Merge button, then Save
