SMTP Question

I'm new to SMTP.  We are running Microsoft SMTP on a server and have all of our applications pointed to it when we then relay to another SMTP which actually does the delivery.  The reason we have it set to send to another SMTP server for delivery is we do not have control over the SMTP server that does the actual e-mailing.  

My question is this..is there a way to configure our Microsoft SMTP server to look into the e-mails and actually log who the intended recipient is?  Or does this require some special SMTP server?  Any help about SMTP you could provide would be appreciated.

Sorry, the default SMTP service in Windows is very crude and offers virtually no sophisticated features.  You'll need to install and use something else to do this.  I don't have any recommendations other than Exchange which our company uses.

Exchange is overkill and a very expensive solution in order to just benefit from better logging. Instead consider installing Sendmail/postfix on a linux server and enable verbose logging. Much more secure and better than Microsoft's pathetic SMTP.
