Autodiscover(?) Authentication Prompts for New Profile with Outlook2007/Exchange2007

When setting up a new Outlook profile either manually or automatically on any of my client machines, I get a prompt for user credentials. the only way I've found to get past this is to enter the credentials for the local administrator of the Exchange server and then the credentials of the user whose profile I'm setting up. Once I've got past this step they never get prompted again

This has not always been the case - configuration used to work as one would expect. Unfortunately, as we don't have that many new starters it's hard to pinpoint exactly when the problem started. My suspicion is that it's been caused by the fact that the Exchange Server spent a brief period as a Domain Controller while work was going on to replace my other DCs. However I've got nothing to back that up other than a gut feeling.

Any suggestions on how I can pinpoint and resolve this problem would be greatly appreciated.
