LVM.

1. You map/place all your physical harddrives/partitions(pv's) into a LVM group (vg)

2. You then create partitions from the pool.  Logical Volumes(lv's)
          (They can span more than 1 harddrive)

3a. Later you add a extra HD(pv), to the vg, (vgextend) and expand any of the lv's.
        (This can be done live, if you file system supports it (e.g. ext3) you can then expand it to fill the new bigger lv where it resides)

3b. There is even tools to move a LV while live, to clear all data from a specific disk(LV) with out the file system noticing.

3c. Snapshotting is another feature, where a point in time snap shot can be taken, to facilitate live backup.
