Looking for Windows 2003/2008 / Exchange troubleshooting guides/tutorials

Does anybody of know a good Windows 2003/2008 / Exchange troubleshooting guides/tutorials? I've been a junior sys admin for 2 years and would like to move up but I feel like I have not very strong troubleshooting skills. Many of the books out there teach boring theory most of the time without application in real world. So I'm looikng for some training materials where the author would have labs set up for Windows Server and Exchange with steps by steps instructions, how to troubleshoot problems like lets say Exchange mail store recovery, File Replication problems, DNS issues, AD recovery and things like that that happen in real world. But they don't happen maybe super often where I can deal with it on daily basis. I know I can google it  but I'm rather interested in somebody's recommendation for a thorough, methodical, real world learning materials
