i need a client access our server; but need to limit his use to one application. How can this be accomplished?

I am the administrator for our server but i am a beginner.  windows server2003 r2.

How do i allow a user to login to the server and limit the use to one application and NOT mess with the other application?  the user will need to RDP to the server and be able to print locally from the server.
