if there's conduit from the T1 to your wiring MDF you can run a cat5 cable (that way you have an extra set of cables already run if you need to expand later).

as far as the T1 pinouts, it's just pins 1,2 and 4,5 that need to get connected, the fact that it's an RJ45 wall jack doesn't really matter. Do you have the wall jack going to a patch panel or terminated onto a 66 or 110 block somwehere?

What is a 66 or 110 block?

I found the 4 pins that serve the T1 in the telco box.  What colored wires go to each one of the 4 pins, and how do I make sure the patch cable wiring is consistent with the same color-coded wiring scheme?

the patch cable wiring, you can use normal ethernet cable, only the first two pairs will be used.

a 66 or 110 block is the wiring block typically you'll see in the telco room where the wires for the different phone lines are connected to each other.
