Move Mailboxes to New Forest

I need to move my user's mailboxes from Exchange 2003 (Forest 1) to Exchange 2007 (Forest 2). I have the new server built and the two-way trust functioning. Are there any good walkthroughs on this type of scenario? I'm not sure what to expect as this is the first time I have moved mailboxes to a new forest and to a 2007 server. I'm not quite sure how to match the mailboxes to the users in the new forest. My supervisor wants me to create the users in the new forest from scratch.
