I would recommend DTS Backup 2000 for DTS packages http://www.sqldts.com/272.aspx. You will however need to change paths to database connections if the databases are to be moved to new server.

For Jobs, click on Jobs in EM under Management > SQL Agent > Jobs, list should appear in right hand screen. Select all jobs and right click, then 'All Tasks' then 'Generate SQL Script'. You will probably have to recreate Maintenenace Plans. You will however need to change paths to database connections in Agent Jobs if the databases are to be moved to new server.
