Does the Domain name have to match the email address name on sbs 2008?

I have an existing server where the domain name is the same as the email address but on the new server, I made it different so as not to confuse anything. Will I still be able to create email addresses on the exchange side that match the old email addresses?

Nope.
As long as the domain name doesn't clash with someone else (use a .local for example) it does not have to.

As for email addresses, taht is just a matter of ensuring that the domain is in the Accepted Domains list, but the wizards will take care of that for you.

I dont quite follow. The old server name was smithandsmith.local and the email addresses were smithandsmith.com for example.

The new server is smith.local but I need the email addresses to be smithandsmith.com. Can this be done?

Yes, you just need to run the wizard and when it asks for your email domain you enter the SMTP domain.

The word "Domain" has two contexts and mean different things. A WINDOWS domain and an SMTP/EMAIL domain can be named the same, but do not have to be and it is perfectly possible for them to be different - many actually recommend that.
