We've recently installed HP drivers for a new network printer on our Citrix server, and since, none of our remote Citrix users are able to see their local printers in Citrix.

Sounds like the new driver overwrote some shared dlls from the old driver.

Have you tried reinstalling the old drivers?
Have you tried using the HP Universal Print Driver for all your HP Printers?
Are there any Printing related errors from the eventlog on the Citrix server?
