You need an Exchange aware backup application to backup Exchange correctly. Backing up the VM machine on its own is not going to be enough. <br />
No free options for Exchange 2007 on Windows 2008 exist at the moment. There are some scripts and hacks floating around, but do you really want to be dependant on those? Backup Assist is probably the cheapest Exchange aware backup solution for Windows 2008. <br />

How do a backup of exchange 2007 in a windows 2008 server
