You need an Exchange aware backup application to backup Exchange correctly. Backing up the VM machine on its own is not going to be enough.
No free options for Exchange 2007 on Windows 2008 exist at the moment. There are some scripts and hacks floating around, but do you really want to be dependant on those? Backup Assist is probably the cheapest Exchange aware backup solution for Windows 2008.

If you wanted to backup the entire virtual machine then you would need to use another product that is Exchange aware so that it can flush out the transaction logs.

Thanks Mestha,
I'll use the both backup the exchange and all the virtual machine, i've looked the Backup Assist and looks nice and cheap.
Otherwise, can you tell us about the virtual machine copy (without stoping) ?

thank's again

You need to look around at products that can do that kind of backup. I am not a HyperV person, I use exclusively VMWARE, so cannot comment on products designed for HyperV.
