Exchange email changing and redirecting

I have a user who has been setup about 3 months ago, this person as does everyone in the business has their own role, now i have been asked by management to change this persons email to be "email@example.com" instead of "firstname.lastname@example.org", ok now doing that is simple enough but i need to make sure anyone sending emails to the old address get notified of the change and their email gets automatically redirected to the new address.

I have administrator rights.
