I have my pix and asa set to the following:

logging trap errors
logging buffered info

Does it over write when its about ot get full? My fear is that the devices will run out of memory. Can this actually happen?

No, the device will not run out of memory.  The ASA allocatees a fixed amount of memory to the log buffer.  The log buffer starts dropping oldest messages when it reaches memory capacity.
