Will I stay within the EULA by purchasing 50 Windows Server 2008 CAL's that will access a total of (3) Windows Server 2008 servers?

You need a CAL for each user (or device), not each Windows server. For example, if you have 50 users and 25 Windows 2008 servers, you only need 50 user cals.
